"Pale straw with green-gold highlights. Excellent creamy mousse with persistent fine bead. Attractive toasty/pastry aromas with brioche and mushroom nuances. Wonderfully  mooth, regal palate; great presence, with ripe Pinot Noir influences balanced by refreshing/tangy natural acidity and our vineyard’s citrussy Chardonnay character. Despite the  bsence of oak in its winemaking, the wine is round, multi - layered and well - textured. Terrific persistence of flavour. The vintage character really shines. Match with crab or pork  umplings; Chinese spring rolls; cold smoked salmon; whole - barbecued lobster, cheese soufflés and the usual range of fine finger - foods and starters." Winemaker's Note

"A 60/40% blend of chardonnay and pinot noir. The base wine did not have any oak maturation, but was taken through 100% mlf. It was taken to bottle in Nov '05, and disgorged in Oct '13. Bright, pale straw-green, excellent mousse; strong toasty/brioche aromas, layers of fruit flavour, with some pinot influence."
