In the local patois Sabrego means granite. José wanted to distinguish the effect of this rock type, without any interference, on Doña Blanca. It comes from the tiny Oímbra region - population 1996 - on the border with Portugal. It sits at 400m above sea level. This wine is raised without a piece of wood, entirely in stainless steel tanks. That's about all I have in the way of background. José doesn't speak a word English and my Spanish is just as good! It opens with a smoky crackle on the nose (I'm tempted to say granite-like) before softening into quince and spice-flecked stone fruits. The mouth feel is both juicy and subtle and shot through with mini explosions of mineral salts. It finishes firm, spicy and dry, with a strong echo of pear and peach and again with a lovely mineral edge.
