We aim to make a Chardonnay with great length, which reaches a balance between richness and elegance. While some techniques are borrowed from the Burgundians, there are some departures from traditional practice in response to local factors, which ensure a unique wine. The most notable of these is that our Chardonnay does not undergo malolactic fermentation, as our local climate leaves the fruit with ideal acidity when it is picked. Our Chardonnay is matured in 30% new French oak barriques with the remainder in older barrels and large casks (1500L). The entire production is barrel fermented. Grape solids are included to give the wine texture, and lees stirring is conducted to add complexity and body. The Chardonnay is matured in barrel for 11 months prior to bottling. – Sam Middleton
“Pale, brilliant quartz-green; the bouquet and palate reveal a wine of ultimate refinement, with laser-like clarity and precision of its flavours; while barrel-fermented, it is the fruit that drives the very long palate; the flavours span white-fleshed stone fruits, a touch of cashew, finishing with grapefruity acidity". 96 points James Halliday Australian Wine Companion
“Light struck match complexity, honeyed, white flowers, white fruit, gentle nougat oak. Medium bodied, very composed, a little gloss to the texture mixing it up with some flint and stuck match. Excellent length. Beautiful wine. So classy. Picture perfect Yarra Chardonnay." 95 points Gary Walsh, The Wine Front
REVIEWS ON SOME PREVIOUS VINTAGES
Mount Mary Chardonnay 2011
"Gleaming yellow-green; a skilfully made wine from mature vines on a great vineyard site; white peach, melon and a touch of fig coalesce with subtle barrel ferment oak on the long and harmonious palate."

Mount Mary Chardonnay 2010
"Very restrained, reserved and distinctively individual, this beautifully textured chardonnay has a dusty, cinnamon-like scent of white peach, nectarine, grapefruit and ginger deftly integrated with creamy, vanilla oak. Long and seamless, with a creamy, nougat-like presence of bright citrus and melon flavour tightly knit with matchstick oak and underpinned by a fine chalkiness, it's supple and savoury, finishing with a lingering core of fruit, a fresh, focused acidity and a lick of wet slate."

"The 2010 vintage shone on one of the Yarra Valley’s most revered vineyards, nurturing a chardonnay of profound and generous complexity. Struck flint and lees funk form a seamless veil over a core of concentrated white peach and grapefruit pith. A deep, mouthfilling, textural structure carries with relentless persistence, confidently pulling the finish in honed and linear."

Mount Mary Chardonnay 2009
"Wonderful green hue, but deeper than usual for Mount Mary; everything you would expect from this producer, subtle power, great balance and great length; white peach with a touch of creamy cashew to the fruit, then savoury minerality adding complexity. A complete wine."
