Benanti is a reference-point producer for beautiful wines from the Etna and Pachino, two of Sicily’s most privileged spots. It offers a great introduction to one of the important indigenous grapes of Etna, such as Carricante. Carricante is typical of the Etna volcano area, where it thrives at higher altitudes and yields wine with a distinct mineral and lemon profile. This is potentially one of Italy's greatest native varieties.
The grapes are allowed to fully ripen and are picked late in October. After a soft pressing fermentation proceeds at temperatures of 18-20°C in steels vats. The wine matures briefly in tanks before maturation for 10-12 months in bottle and then released onto the market.
No oak is used.
